1. Date and Nut Ladoo:

Ingredients:

  • 1 cup pitted dates
  • 1/2 cup mixed nuts (cashews, almonds, pistachios)
  • 1/2 tsp cardamom powder
  • Desiccated coconut for rolling

Instructions: 

  • Process the mixed nuts, cardamom powder, and pitted dates in a food processor until a sticky mixture forms.
  • Roll tiny ladoos out of small portions of the mixture.
  • For a beautiful presentation, roll the ladoos in desiccated coconut.

2.  Besan Ladoo (No Ghee)

Ingredients:

  • 1 cup of chickpea flour
  • ¼ cup almonds, chopped
  • ¼ cup unsweetened coconut, shredded
  • ¼ cup cocoa butter, melted ( or coconut oil at room temperature)
  • ½ cup coconut sugar (or regular sugar)
  • ½ teaspoon cardamom powder
  • 8 strands of saffron
  • A pinch of nutmeg powder
  • A pinch of salt
  • 4 tablespoons coconut milk (or another dairy-free milk)

Instructions

  • Add the chickpea flour to a large pan over low heat and dry roast, turning once or twice, for about five minutes.
  • Add the coconut, cocoa butter, and almonds and reduce the heat to low-medium. Mix thoroughly and roast for ten to fifteen minutes. Cut the heat off.
  • Add the cardamom powder, nutmeg, saffron, coconut sugar, and salt. Add the coconut milk to the mixture gradually and thoroughly. More drops of milk should be added if the mixture doesn’t come together.
  • After allowing it to cool for a few minutes, shape the mixture into 1-inch balls.
  • Place on a lovely platter and enjoy!

3. Almond Ladoos:

Ingredients:

  • 1 cup almond flour
  • 1/2 cup powdered sugar
  • 2 tbsp almond butter
  • 1/2 tsp cardamom powder
  • A pinch of saffron strands (optional)
  • Chopped almonds or granola for garnish

Instructions:

  • In a mixing bowl, combine almond flour, powdered sugar, almond butter, cardamom powder, and saffron strands (if using).
  • To make a smooth dough, thoroughly mix.
  • Make ladoos by rolling small portions of the dough.
  • Sprinkle chopped almonds on top, or you can toss your laddoo in the granola for that extra crunch.
