Vegan Recipe: Spicy Okra with Vegetable fried rice

Ingredients:

  • Okra (Bhindi)
  • Carrots
  • Broccoli
  • Onion
  • Tomato
  • Pickled Jalapenos
  • Chopped coriander
  • Salt
  • Cumin powder (jeera)
  • Fennel powder (saunf)
  • Raw mango powder (aamchur)
  • Raw ginger powder
  • Red chilli powder
  • Mustard Oil
  • Extra-virgin Olive Oil

Instructions:

Rice: Heat some extra-virgin olive oil (chilli and coriander infused) in a wok and add some finely chopped broccoli and toss for a minute. Add some chopped carrots and mix it well. Add some salt once the vegetables start to fry and open up. Then add cooked rice, coriander, sprinkle half lime and add some more salt to taste and mix.

Okra: I used the frozen ones. I allow them to thaw for 2-3 mins in a bowl of water and then put it on a pre-heated pan. Once the water has evaporated, add some mustard oil and the spices (cumin powder, fennel powder, raw mango powder, raw ginger powder and red chilli powder). Add some salt and keep frying until they turn this colour.

Serve the okra alongside the rice with a finely chopped onion/tomato/pickled jalapeño salsa mixed with rock salt.
